Enologist
He is a central figure who works between the vineyards and the cellar, controlling all stages of production, from cultivation to bottling up to conservation. He can select the vine and offer advice on pre-implantation; follows the phenological phases of the vine deciding the harvest period; carries out chemical-physical analyzes and establishes processing protocols. Its main responsibility is to keep production under control so that it takes place in a safe and correct way, respecting all the physical, chemical, organoleptic properties of the wine and the standards of the production regulations and the international code of the OIV (International Organization of Vineyards and Wine ). He almost always interfaces with the cellarman and participates in the elaboration of corporate strategies with the marketing and commercial departments: he can propose both improvements to the production process, as well as recommendations on packaging and on the label as well as providing advice on consumer tastes.
