The Wine Cellar Manager
He is a skilled worker who takes care of the heart of the production process: he takes over the grapes harvested by the grape harvesters and follows all the transformation operations, from pressing to fermentation. He has in-depth knowledge of the production process and technical knowledge of the cellar equipment; works in close synergy with the oenologist to better define the processing procedures and standards. Meticulously controls the fermentation of the wine according to the type of production and inoculates the necessary yeasts. Check the optimal temperatures of the tanks and then monitor the transfer into the barrels. Finally, it checks the result obtained in terms of quality and also prepares the bottle transfer operations. It can also take care of bargaining with customers by preparing estimates in collaboration with the marketing department.
